- Portabello Tortelloni with Italian Sausage
- (Serves 2 - 4)

- Hi, Im Grandma Jean and I would like to
share with you some of my familys favorite recipes and kitchen tips in each issue of
our newsletter. So, lets get to the kitchen and start cookin.

- 1 large sweet onion (cut into large slices)
- 1 large red pepper (cut into large slices)
- 1/4 cup olive oil 1/4 cup grated parmesan
cheese
- 1 pkg. DiGiorno Portobello Mushroom
Tortelloni*
- 1 lb. Italian sausage (cut into 1"
slices)**

- Sauté the onion and pepper slices in olive
oil over medium heat for 5 to 6 minutes.
- Salt and pepper to taste.
- Meanwhile, boil water for the pasta, and cook
according to directions on the package.
- In another frying pan, cook sausage until
brown. Drain off any fat, and add to the onions and peppers.
- Put drained pasta into large serving bowl. Add
the sausage/onion/pepper mixture to the pasta and toss with a little touch more of olive
oil.
- Add the parmesan cheese and serve with a fresh
tossed salad and garlic bread. Ummm Ummm.

- * You can substitute with any DiGiorno
tortelloni.
- ** You can substitute the sausage with
boneless chicken breast.
Kitchen Knowledge
- Need Lo-Cal Sour Cream??
Use 1 cup of cottage cheese a 1 Tbsp of lemon juice and blend until smooth.

- Approximate Measurements!!
- 1 lemon makes approx. 3 Tbsps of juice.

- When a recipe calls for a 4 cup baking dish
you can use any of the following:
- a 9" pie plate
- an 8" layer cake pan
- a 7 3/8" x 3 5/8" loaf pan
