Portabello Tortelloni with Italian Sausage
(Serves 2 - 4)
 
Hi, I’m Grandma Jean and I would like to share with you some of my family’s favorite recipes and kitchen tips in each issue of our newsletter. So, lets get to the kitchen and start cookin’.
 
1 large sweet onion (cut into large slices)
1 large red pepper (cut into large slices)
1/4 cup olive oil 1/4 cup grated parmesan cheese
1 pkg. DiGiorno Portobello Mushroom Tortelloni*
1 lb. Italian sausage (cut into 1" slices)**
 
Sauté the onion and pepper slices in olive oil over medium heat for 5 to 6 minutes.
Salt and pepper to taste.
Meanwhile, boil water for the pasta, and cook according to directions on the package.
In another frying pan, cook sausage until brown. Drain off any fat, and add to the onions and peppers.
Put drained pasta into large serving bowl. Add the sausage/onion/pepper mixture to the pasta and toss with a little touch more of olive oil.
Add the parmesan cheese and serve with a fresh tossed salad and garlic bread. Ummm Ummm.
 
* You can substitute with any DiGiorno tortelloni.
** You can substitute the sausage with boneless chicken breast.

 

Kitchen Knowledge

Need Lo-Cal Sour Cream??
Use 1 cup of cottage cheese a 1 Tbsp of lemon juice and blend until smooth.
 
Approximate Measurements!!
1 lemon makes approx. 3 Tbsps of juice.

When a recipe calls for a 4 cup baking dish you can use any of the following:
a 9" pie plate
an 8" layer cake pan
a 7 3/8" x 3 5/8" loaf pan

TOTAL POINTS

 

If you scored 4 points or more, you should be at above average risk of a first heart attack compared to the general adult population. The more points you score, the greater your risk. Only your doctor can evaluate your risk and recommend treatment plans to reduce it.
